DAY 9: Christmas ‘Black’ Cake
This traditional fruit cake can be found in most Grenadian homes at Christmas time. Made predominantly of alcohol soaked prunes, currants and raisins. Flavorful and moist, it is an anticipated treat each year.

DAY 10: Ponche De Creme Drink – A Caribbean version to eggnog and a Holiday favorite. Great end of 
day drink sitting with family and friends.
Serves 12
6 eggs
Peel of 1 lime
3 cans of evaporated milk (15oz.)
1 ½ cans condensed milk (14oz.)
1 tsp. aromatic bitters
½ tsp. grated nutmeg
½ cup rum (optional)
Beat eggs and lime peel until light and fluffy. Add evaporated milk. Sweeten to taste with condensed milk. Add bitters, grated nutmeg and rum (to taste). Remove lime peel.
Serve chilled and/or with ice.

Grenada Swim Coaches & Teachers
The Management and staff of Blue Horizons Garden Resort is pleased to team up with FINA and The Grenada Amateur Swimming Association to facilitate a national Coaching Clinic hosted by top international Coach Rick Powers.
The Clinic ran from November 24th – 28th, 2010 at the hotel located in Morne Rouge, St. Georges.
Fifty enthusiastic coaches and teachers of both primary and secondary schools from across the tri-island state attended the Clinic. These coaches are expected to return to their respective schools and parishes to implement learn to swim programs and techniques.
Mr. Arnold D. Hopkin, Owner/ Manager expressed how pleased he was to assist GASA to make this program possible. He believes that every child in Grenada, Carriacou and Petit Martinique will have an equal opportunity to learn to swim.
